Breakfast Sausage with Sagemary Salt

Serves 4 to 6

These scrumptious patties are very quick to put together. If you have vinyl foodservice gloves, wear them to mix the sausage. Your hands are the best for mixing. Serve with pancakes or your favorite eggs scattered with extra Sagemary Salt.

2 lbs. ground pork
2 tsp. Sagemary Salt
1 tsp. freshly ground black pepper
½ tsp. chopped fresh thyme leaves, optional
¼ tsp. ground allspice
¼ tsp. ground nutmeg
2 large eggs
1-2 TB Oil

Place all ingredients in a bowl and mix well. Heat some oil in a large skillet over medium-high heat. Spoon sausage into skillet and flatten to form a patty. Brown well, turn over, and brown second side. Remove to a plate lined with paper to drain and serve.
