The Queen, Fleur de Sel de Guerande. Hand-raked crystals from pristine salt ponds in Brittany, France. Conditions need to be perfect to harvest this luscious sea salt. The sun, air temperature, and wind align to evaporate the water's surface and the crystals form. Once formed they are raked off using only traditional wooden rakes. Unprocessed, unrefined, Fleur de Sel de Guerande has a big, complex flavor of sea and minerals. Moist, crunchy texture. Use as a finishing salt on meats, seafood, vegetables, salads, starches, eggs. Sprinkle a touch on warm chocolate or caramel sauce.
